Banana Muffins

These tasty muffins are a great way to use up over ripe bananas. Toss in some dates or walnuts for some extra bite.

    INGREDIENTS

  • 325 ml or 1 1/3 cup all-purpose flour
  • 75 ml or 1/3 cup granulated sugar
  • 15 ml or 1 tbsp baking powder
  • 2 ml or 1/2 tsp ground cinnamon
  • 1 ml or 1/4 tsp ground nutmeg
  • 1 ml or 1/4 tsp salt
  • 375 ml or 1 1/2 cup Special K* cereal
  • 1 or - egg
  • 75 ml or 1/3 cup skim milk
  • 50 ml or 1/4 cup vegetable oil
  • 250 ml or 1 cup mashed ripe bananas (about 2 medium)

DIRECTIONS

1. In large mixing bowl, combine flour, sugar, baking powder, cinnamon, nutmeg and salt. Stir in crushed cereal.

2. In small bowl, beat egg slightly; stir in milk, oil and bananas. Add to dry ingredients, stirring just until combined. Portion batter evenly into lightly greased or paper lined muffin-pan cups.

3. Bake at 200°C ( 400°F ) for about 20 minutes or until golden brown and firm to the touch.
